ASSEMBLY PROTOCOL
Start with cool ingredients.
The vegan cream cheese and butter should be cool and pliable, not cold-hard and not warm. This keeps the icing thick and controlled instead of loose and sloppy. Beat together until smooth and fully combined. No streaks. No chunks. No excuses.
Add the powdered sugar gradually, starting with 2½ cups, and beat until thick, creamy, and cohesive.
Add the vanilla, TRUE LEMON® crystals, and salt, then beat again until fully incorporated. This is where the icing becomes tangy and balanced instead of bluntly sweet.
Check the texture.
The icing should be:
- Thick but spreadable
- Smooth and creamy
- Able to hold a soft swoop before gently relaxing
If you want more body, add the remaining ½ cup powdered sugar as needed.
Do not add liquid.
Stop mixing as soon as it looks right.
